Vegan Mashed Potatoes
November 14, 2024Drum roll please for our November Savory Sides Series!!! All month long we’ll be sharing dreamy side dishes to add to any Thanksgiving table. Mashed potatoes are obviously a classic we had to hit! They’re creamy and oh so dreamy – we can’t wait for the whole crew to try ’em.
WHAT YOU’LL NEED FOR THE VEGAN MASHED POTATOES
- 5 lb bag of russet potatoes, cleaned and peeled
- ½ cup unsweetened & unflavored plant-based milk
- 1 cup Pure Coconut cocojune
- 6-8 tbsp plant-based butter
- 3 tsp Garlic powder
- 1 tsp Onion powder
- ½ – 1 tsp kosher salt
- Handful of minced chives or parsley
STEPS TO DELICIOUSNESS
- Over medium-high heat, boil a pot of water with a big pinch of salt.
- Once the potatoes are fork tender, drain the water.
- Add the plant-based butter, garlic powder, onion powder, yogurt and your plant-based milk.
- Mash until smooth and fluffy, or however you like your potato consistency (we don’t judge!).
- Top with herbs, fresh pepper and more butter. Serve your vegan mashed potatoes hot, but we can guarantee they’ll be gone before they cool down!
