Strawberry Matcha Waffles

We’ve whipped up this dreamily delicious stack of waffles topped with homemade strawberry compote, probiotic-packed Strawberry Unsweetened cocojune, and a dusting of vibrant matcha to create this perfect brekkie! Plus, this recipe is 100% dairy-free and sure to please allll your breakfast needs 🧇🍓🍵
WHAT YOU’LL NEED
Flax Egg
- ¼ cup ground flaxseeds
- ½ cup water
Yogurt Milk Mixture
- 1 cup cocojune Strawberry Unsweetened yogurt
- 2 ½ cups of plant milk
- 2 tbsp ACV
Waffle Ingredients
- 3 ½ cups AP flour
- 2 tbsp baking powder
- 1 tsp salt
- ½ cup granulated sugar
- ½ cups melted plant butter
- 3 tsp vanilla extract
STEPS TO DELICIOUSNESS
- Mix flax and water in a small bowl. Set aside for about 5 minutes to thicken.
- Mix ingredients for yogurt milk mixture in a medium bowl. Set aside
- Combine flour, baking powder, salt and sugar in a medium bowl. Pour in flax egg, yogurt milk mixture, melted butter and vanilla extract. Whisk until well combined. Should be thick but still smooth and slightly runny.
- Heat up your waffle iron with butter. Pour in batter, wait until waffles are deep golden brown on both sides and edges are slightly crisp.
- Top with heaping dollops of cocojune Strawberry Unsweetened yogurt, strawberry compote and dusting of matcha! Enjoy!
