Strawberry Matcha Waffles

We’ve whipped up this dreamily delicious stack of waffles topped with homemade strawberry compote, probiotic-packed Strawberry Unsweetened cocojune, and a dusting of vibrant matcha to create this perfect brekkie! Plus, this recipe is 100% dairy-free and sure to please allll your breakfast needs š§ššµ
WHAT YOU’LL NEED
Flax Egg
- Ā¼ cup ground flaxseedsĀ
- Ā½ cup water
Yogurt Milk Mixture
- 1 cup cocojune Strawberry Unsweetened yogurtĀ
- 2 Ā½ cups of plant milkĀ
- 2 tbsp ACV
Waffle Ingredients
- 3 Ā½ cups AP flourĀ
- 2 tbsp baking powderĀ
- 1 tsp saltĀ
- Ā½ cup granulated sugarĀ
- Ā½ cups melted plant butterĀ
- 3 tsp vanilla extract
STEPS TO DELICIOUSNESS
- Mix flax and water in a small bowl. Set aside for about 5 minutes to thicken.
- Mix ingredients for yogurt milk mixture in a medium bowl. Set asideĀ
- Combine flour, baking powder, salt and sugar in a medium bowl. Pour in flax egg, yogurt milk mixture, melted butter and vanilla extract. Whisk until well combined. Should be thick but still smooth and slightly runny.Ā
- Heat up your waffle iron with butter. Pour in batter, wait until waffles are deep golden brown on both sides and edges are slightly crisp.Ā
- Top with heaping dollops of cocojune Strawberry Unsweetened yogurt, strawberry compote and dusting of matcha! Enjoy!
