Raw Coconut Key Lime Pie Bites

Summer heat is calling for cold treats and fresh flavors. Like these raw coconut key lime pie bites. SERIOUS SWOON.

Made with our limited edition flavor, Blue Magic, which has the dreamiest twist for a tropical inspired key lime pie.

WHAT YOU’LL NEED FOR THE KEY LIME FILLING

  • 2 x 4oz containers of cocojune’s Blue Magic yogurt
  • 2 x 4oz containers cocojune’s Pure Coconut yogurt
  • Zest + juice of 1 lime
  • ⅓ cup coconut oil, melted
  • ¼ cup maple syrup

WHAT YOU’LL NEED FOR THE PIE CRUST

  • 2 tbsp coconut oil, melted
  • 1 cup walnuts
  • ¾ cup rolled oats

STEPS TO DELICIOUSNESS

  1. Preheat the oven to 350F.
  2. In a food processor, add walnuts, oats, and melted coconut oil. Pulse until fully combined into a fine meal. It should be sticky, not dry – If it’s too dry, add a little more coconut oil. 
  3. In a lined muffin tin, add 1 tbsp of the crust mix and press down with the bottom of a small cup or a mortar to make it smooth.
  4. Bake in oven for 10 minutes or until golden. Remove from oven and let cool.
  5. In a blender, add coconut yogurt, zest of ¼ lime, ½ of the maple syrup (2 tbsp) and coconut oil. Blend until smooth. 
  6. Pour into muffin cups and fill halfway to the top. Place in freezer for 20 minutes to slightly harden before adding the second layer.
  7. Make your second layer by adding the Blue Magic yogurt, zest of ¼ lime, and the remaining ½ of the maple syrup (2 tbsp). 
  8. Pour into the muffin cups to the top. Top with lime zest, and place in the freezer to set for several hours. 
  9. Keep stored in the freezer 🙂
