Plant-Based Holiday Cookies
December 5, 2024Holiday szn is in fullll swing over here at june HQ and we’re starting off our ✨Holiday Dessert Series ✨ with the dreamiest selection of cookies featuring our gal pal Pure Coconut… a classic!! We’re making these for all our holiday gatherings this year and think you should too! There’s many ways to decorate these treats, we can’t wait to see what you create. 😍
WHAT YOU’LL NEED FOR THE PLANT-BASED HOLIDAY COOKIES
- 2 ¼ cups all purpose flour
- ⅓ cup granulated sugar
- ¼ cup ground almonds
- 5 oz vegan butter, cubed
- 2 tbsp soy milk
- 2 tbsp cocojune Pure Coconut yogurt
STEPS TO DELICIOUSNESS
- Preheat oven to 350F.
- Combine all dry ingredients to a medium bowl.
- Mix in vegan butter with your hands. Rub the butter in with the dry ingredients to combine. Batter should look slightly like wet sand, crumbly but definitely moist!
- Add in your plant-based milk and cocojune Pure Coconut. Knead into a smooth dough, give it some loveeee. It should go from crumbly to smooth rather quickly.
- Flour your work surface and roll out the dough into about ⅛ inch thick square-like shape (doesn’t really matter the shape, just enough room to cut out the cookie dough!
- Use your favorite holiday cookie cutters to stamp out cookies!
- Bake for 10-12 minutes. Let cool, decorate to your heart’s desire and enjoy!
