Orange & Earl Grey Yogurt Tea Cake
July 24, 2024We’ve got the tea… (cake) 🫖🍰 This dreamy orange and earl grey tea cake topped with Pure Coconut june is making us feel extraaa posh this week!
This recipe can be adapted to be plant-based, just swap out the 2 eggs for an egg replacement or flax egg. It’ll still be dreamily delicious!
WHAT YOU’LL NEED FOR THE ORANGE & EARL GREY YOGURT TEA CAKE
- 1 cup olive oil
- 2 cups AP flour
- ¼ loose leaf earl grey tea
- 1 tsp sea salt
- ½ tsp baking soda
- ½ tsp baking powder
- 2 eggs or flax egg
- 1 ¼ cup granulated sugar
- 1 cup cocojune Pure Coconut yogurt
- 1 tsp vanilla extract
- Zest of one orange, then thinly slice into 4-5 rounds
STEPS TO DELICIOUSNESS
- Preheat oven to 325. Lightly coat a springform pan or loaf pan with olive oil. Line with parchment paper.
- Mix dry ingredients together in a medium bowl.
- In a separate bowl combine eggs and sugar. whisk until light and fluffy, about 1-2 minutes. Mix in cocojune Pure Coconut, earl grey tea, and vanilla extract. Pour wet ingredients into dry bowl and whisk to combine.
- Grandtully stream in 1 cup of olive oil. Whisking until fully incorporated. Should look glossy and well incorporated.
- Pour batter into your pan and smooth the top. Bake for about 1 hour. Use a toothpick or chopstick and insert it into the center, when it comes out clean its done!
- Let rest for about 20 minutes and enjoy!
