Lemon Lavender Muffins
April 12, 2024Spring has sprung and we’re craving allll the bright and floral goodness we can get our hands on! These lemon lavender muffins just fit the bill. FOR THE LEMON LAVENDER MUFFINS
Recipe makes 6 small muffins
- ¾ cup all purpose flour
- ¼ cup sugar
- ⅜ cup @cocojune_organic Vanilla Unsweetened coconut yogurt + more for icing
- ¼ cup olive oil
- 1 egg
- ¼ cup lemon juice
- 2 tbsp lemon zest
- ½ tsp vanilla extract
- 1 tsp baking powder
- ¼ tsp salt
- ¼ tsp turmeric (for color)
- 1 tbsp dried lavender buds + more to top
- cooking spray
STEPS TO DELICIOUSNESS
1. Preheat the oven to 375F.
2. Combine sugar and lemon zest in a small bowl and let it sit while preparing other ingredients.
3. Whisk flour, salt, baking powder, and turmeric to combine in a medium bowl.
4. In a large bowl, stir yogurt, olive oil, egg, vanilla, lemon juice, and zest/sugar mixture to combine.
5. Add the dry ingredients and lavender buds to the wet ingredients and stir just until combined.
6. Add batter to sprayed muffin tin and bake for 18-24 minutes or until a toothpick inserted into the middle of the muffin comes out clean.
7. Let everything cool if not eating right away, then top with more cocojune yogurt, lemon zest, and optional lavender sprig.
