Green Bean Casserole
November 19, 2024Vegan Green Bean Casserole…yep we did THAT 😍 Our organic and dreamily delicious Pure Coconut is the star of the show here and she really has outdone herself ✨ These green beans are the perfect cozy side dish during the holiday hosting season, catch us dipping in for seconds…and maybe even thirds!
WHAT YOU’LL NEED FOR THE GREEN BEAN CASSEROLE
- 1-1.5 lbs of green beans, rinsed and ends trimmed
- 4 tbsp plant-based butter
- 2 yellow onions, halved and sliced
- 5 garlic cloves, minced
- 1 heaping cup chopped mushrooms
- 2 tbsp flour
- 4 oz Pure Coconut cocojune
- ½ cup vegetable stock
- ½ unsweetened & unflavored plant-based milk
- 1 tsp garlic powder
STEPS TO DELICIOUSNESS
- Preheat the oven to 400F.
- Bring a large pot of water to a boil and add a hefty pinch of salt.
- Place green beans in a pot to blanch for about 3-5 minutes then place in ice water. Drain and set aside.
- In a small pan on medium heat, add plant-based butter, onions and garlic.
- Stir to caramelize the onions for about 15 minutes. Maybe even throw on your favorite song and dance it out as you stir🕺
- Throw in your mushrooms; stir and simmer for about another 5 minutes. Add 2 tbsp of butter if it’s drying out.
- Add flour, Pure Coconut cocojune, vegetable stock, plant-based milk, garlic powder, onion powder and a small pinch of salt to the pot.
- Stir the green beans in and simmer for about 3 minutes. The mixture should thicken and get nice and creamy 🤤
- Place this dreamy green bean mixture into the casserole dish and top with fried onions.
- Place in the oven for about 15 minutes, then serve the green bean casserole immediately.
