Cranberry Tart

There’s no better way to continue our ✨Holiday Dessert Series✨ partayyy than with a dreamy Cranberry Apple Tart! She’s got a festive pop of color and the perfect amount of creaminess from a dollop of our Pure Coconut june. Bring this to your next holiday hang, and we’re sure you’ll be the talk of the town!

WHAT YOU’LL NEED FOR THE CRANBERRY APPLE TART

  • 4-5 apples, halved then thinly sliced into half moons  
  • 4 cups fresh or frozen organic cranberries 
  • ½ cup organic cane sugar 
  • ½ cup water
  • ½ cup orange juice 
  • 4oz cocojune pure coconut 
  • Cinnamon and turbinado sugar for topping 
  • Your favorite vegan puff pastry or pie crust 
  • 2 tbsp vegan milk for egg wash replacement

STEPS TO DELICIOUSNESS

  1. Heat your oven to 375F.
  2. Add the water, orange juice and sugar to a medium saucepan over medium heat. Allow the sugar to fully dissolve, then add in your cranberries.
  3. Cook this for about 10-15 minutes until the cranberries are soft and start to pop. If you’re using other fruit, add it in. Transfer the mixture to a bowl to cool. We suggest making this the night before or you can pop it in the fridge for about 30 minutes to an hour 🙂
  4. Roll out your favorite vegan puff pastry or pie dough onto your tart pan.
  5. Evenly spread about ½ a cup of cranberry sauce onto the puff pastry/pie crust. Arrange your apples and then sprinkle with turbinado sugar. Brush the edges with vegan milk and then bake for about 20 minutes or until edges are golden brown 😍
  6. Allow everything to fully cool and then top with cinnamon, cocojune Pure Coconut, lemon or orange zest and any fruit you’re feeling 💕
