Dairy-free Tomato Soup
January 2, 2024Nothing better than getting allll warm and cozy with a bowl of dairy-free tomato soup on a crisp fall day! It’s a classic that we just can’t get enough of! Our friend @realfoodwithgratitude made this dreamy bowl with a side of toasted sourdough lathered in cocojune Original Labneh… what could be better?
WHAT YOU’LL NEED
- 1 tbsp olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 28oz can diced tomatoes
- 1 cup vegetable broth
- ½ cup coconut milk
- ½ tbsp balsamic vinegar
- Salt and pepper to taste
HOW TO MAKE
- Head up a large pot with olive oil
- Chop the onion and mince the garlic. Add them to the pot and cook on low until soft.
- Add the can of diced tomatoes and broth. Stir to combine.
- Mix in the coconut milk, balsamic, and seasonings to your liking!
- Pair this dairy-free tomato soup with a fresh slice of sourdough spread with cocojune Original Labneh for a dreamy dipping experience 🙂
