Apple Cinnamon Muffins
September 3, 2024It’s September, you know what that means… all our fall favorites are coming back! We’re so ready for fall and back to school szn. To make this transition from summer a little easier we’ve created some dreamy, dairy-free recipes to keep your tummy full during this busy time! These Apple Cinnamon Muffins and definitely going to please the whole fam, seriously there’s no better flavor combo!
WHAT YOU’LL NEED FOR THE APPLE CINNAMON MUFFINS
- 1 cup applesauce
- ½ cup Pure Coconut cocojune
- ⅓ cup melted unsalted vegan butter
- 2 flax eggs (2 tbsp flax meal, 6 tbsp water)
- ½ cup granulated sugar
- 2 teaspoon pure vanilla extract
- 1 pinch salt
- 1 ½ cups gluten-free or all-purpose flour
- ½ teaspoon gluten-free baking powder
- 2 tablespoon ground cinnamon
- 1 Apple, thinly sliced for garnish
STEPS TO DELICIOUSNESS
- Preheat oven to 350° F. Use baking cup liners to line your muffin tin or cooking spray if you don’t have liners.
- In a large mixing bowl add the applesauce, cocojune Pure Coconut, melted vegan butter, flax eggs and vanilla. Mix together until fully combined.
- Stir in the granulated sugar and salt.
- Stir in the flour, baking soda, baking powder and cinnamon. Mix until all the ingredients are smooth and fully combined.
- Scoop the batter into baking cups lined/cooking sprayed muffin tin using a ice cream scoop or spoon.
- Bake for 20-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool. Enjoy!
